Spicy Grilled Pork Tacos
with Pineapple

WHAT YOU NEED TO GET:

1 Bruemar Pork Tenderloin, cut into strips

+ 2 teaspoon cumin
+ 1 teaspoon chili powder
+ 1/2 teaspoon garlic powder
+ 1/2 teaspoon dried oregano
+ 1/4 teaspoon onion powder
+ 1/4 teaspoon black pepper
+ 1/4 teaspoon salt

+ 2 tablespoons olive oil 

 

+ 4 slices fresh pineapple, cut into thin long spears
+ 1 medium red onion, sliced
+ 1 red capsicum, diced

+ 1 packet soft tacos
+ Guacamole

 

+ Fresh coriander
+ Lime wedges
+ Sour cream, optional

WHAT YOU NEED TO DO:

1. To make the marinade, combine cumin, chilli, garlic, oregano, onion powder, salt, pepper and 2 tablespoons of olive oil in a mixing bowl. Pour the marinade over Pork strips, season with salt and pepper and toss to coat well. If possible, let marinate for at least 30 minutes.

 

2. Heat oil in a pan and fry Pork Strips for about 7-10 minutes on high heat.

 

3. In the meantime, place pineapple spears, capsicum and onion on a greased medium heat BBQ plate. Season with pepper and salt. Grill for 1 to 3 minutes per side, or until charred to your liking. Dice Pineapple spears, capsicum and red onion.

 

 

4. Heat soft tacos to your liking. Assemble Tacos with Pork strips, pineapple, onion and capsicum, top with guacamole and fresh coriander. Optional: Add a dollop of sour cream over the tacos.
