with Chorizo and Olives
What you need to get:
1 Pack Pork Loin Steaks with Dijon Mustard and Herb Seasoning
+ 2 teaspoons olive oil
+ 50 g chopped chorizo
+ 1 red onion, sliced
+ 1 red capsicum, cut into strips
+ 2 teaspoons smoked paprika
+ 400 g can diced tomatoes
+ 420 g can butter beans, drained and rinsed
+ 100 g green olives
+ 2 tablespoons freshly chopped parsley
+ Lemon wedges
What you need to do:
1. Heat 1-2 teaspoons of oil into a medium-heat frying pan. Add the chorizo, onion and capsicum and cook for 3-4 minutes, stirring occasionally. Remove from the pan to a plate and set aside.
2. Place Steaks in the pan and cook for 3 minutes on each side, turning only once. Return the chorizo and pepper mixture to the pan and stir in the paprika.
3. Stir in the tomatoes, butter beans and olives. Simmer covered for 5 minutes, until the steaks are cooked through. Season.
4. Sprinkle with the parsley and a squeeze of lemon before serving.
