1. Pre-heat oven to 160°C.
2. Place a large oven safe pot or pan over medium-low heat. Add 2 tablespoons butter and onion and cook until the onions are golden brown, remove and set aside.
3. In the same pan add 1 tablespoon of butter and 2 cups of shredded pulled pork along with the onions. Mix all ingredients together.
4. Whisk together eggs and cream, then pour whisked eggs over mixture. Sprinkle salt and pepper on top of whisked eggs.
5. Place in oven to bake for 30 minutes.
6. Let rest for 5 minutes before serving.
