Pork Crackling and Prawn Salad
What you need to Get:
350g Pork Rind, cut into 4-cm strips
+ 200g prawns, raw and peeled
+ 280g baby spinach leaves
+ 75g bean sprouts
+ 1 cup mint leaves
+ 1 chilli, seeds removed, thinly sliced (optional)
1 tablespoon lemon juice
2 tablespoons olive oil
1/3 cup soy sauce
1 tablespoon white sugar
What you Need to Do:
Preheat oven to 220 °C (Fan Forced).
Place the Pork Rind on a roasting tray and bake for about 25-30 minutes or until crisp. Set aside to cool.
Meanwhile cook the prawns according to the instructions on the package.
For the dressing, combine lemon juice, olive oil, soy sauce and sugar in a jar. Shake until well combined. Season with salt and pepper.
Mix baby spinach, bean sprouts and mint leaves in a large serving bowl. Add Pork Crackling and Prawns into the salad mixture.
Drizzle with the dressing and toss to combine. Serve immediately.
