a) Pork Belly Satay Skewers with Peanut Dipping Sauce

WHAT YOU NEED TO GET:

1 Bruemar Pork Belly, cut into large cubes
+ Oil
+ Salt

+ ¼ cup sweet chili sauce
+ 2 tablespoons rice wine vinegar
+ 2 Lebanese cucumber, thinly sliced
+ salt and pepper
+ 2 tablespoons sesame seeds

+ 100g crunchy peanut butter
+ 15g ginger, minced
+ juice from 1 lemon
+ 1 teaspoon sesame oil

+ 2 tablespoons soy sauce
+ 1/3 cup warm water
+ fresh cilantro


+ 1 ½ cups white rice, if served as a main

WHAT YOU NEED TO DO:

1. Pre-heat air fryer to 180 °C. Wipe the rind of any moisture with a paper towel. Rub the Pork rind with oil, then salt generously into the scores and into the rind. Cut the Pork Belly into large cubes. 

 

2. Place Belly cubes onto air fryer tray, rind side up, cook for 25-30 minutes. Remove from air fryer and allow to stand for 5 minutes.

 

3. While the Pork Belly is cooking, prepare the salad ingredients. In a small bowl, combine rice wine vinegar and sweet chili sauce. Season with salt and pepper. Toss cucumber with dressing and sprinkle with sesame seeds.

 

4. In a separate bowl, combine peanut butter, ginger, lemon juice, sesame oil and water until smooth.

 

5. a) Pork Belly Satay Skewers with Peanut Dipping Sauce 

Thread 3-4 Pork Belly pieces onto skewers and arrange on a platter with the cucumber salad. Sprinkle with cilantro and serve with peanut dipping sauce on the side.


b) Pork Belly Satay Skewers with Rice 

Cook rice according to packet instructions. Thread 3-4 Pork Belly pieces onto skewers. Divide rice among serving bowls, top with Satay Skewers and peanut sauce. Sprinkle with cilantro and serve with cucumber salad on the side.
