Mediterranean Pork
and Vegetable Skewer

What you need to Get:

1kg Pork Topside, diced into 2.5 cm pieces


+ 1/2 cup olive oil

+ Juice and zest from 1 lemon

+ 2 teaspoons smoked paprika

+ 2 teaspoon dried oregano

+ 1 garlic clove, minced

+ salt and pepper


+ 1 zucchini, sliced

+ 1 red capsicum, diced

+ 1 yellow capsicum, diced


What you need to do:

1. Combine olive oil, lemon juice and zest, smoked paprika, garlic and oregano in a small bowl. Season with salt and pepper.


2. Place Pork in a zip lock bag and pour seasoning mixture over it. Thread the Pork, zucchini and capsicum, alternating ingredients onto the skewers.


3. Heat the frying pan or BBQ to a medium high heat. Cook Skewers for about 14-18 minutes or until fully cooked, turning frequently. Serve with flatbread and tzatziki.
