What you need to Get:

1 Pork Loin Roast with Spices & Herbs 

+ 450g Heirloom Tomato Mix, halved
+ 1 cup watermelon, cut into cubes 
+ 1 cup rockmelon, cut into cubes
+ 100g (marinated) feta cubes


Honey-Balsamic Vinaigrette

+ pepita seeds 
+ parsley, chopped

What you need to do:

1.Preheat oven to 180 °C (Fan Forced). Remove all packaging and place roast on a baking tray; cover with foil to prevent seasoning from burning. 

2. Cook for approximately 60 minutes or until cooked through. Remove foil for the final 10 minutes of cooking. 

3. Place Pork to a cutting board and allow to rest for at least 5 minutes before carving. In a small bowl, whisk together olive oil, balsamic vinegar and honey. Season with salt and pepper. Combine the tomatoes, watermelon and feta cubes in a large bowl.


4. Drizzle with dressing, gently toss to combine. Top with pepita seeds and parsley before serving.
