LEFTOVER PORK FRIED RICE

What you need to Get:

500g leftover Pork, diced

+ 2 tablespoons butter
+ 2 garlic cloves, minced

+ 250g frozen carrots, peas and corn mix
+ Salt and pepper

+ 250g microwave white rice
+ 1 tablespoon sesame oil
+ 4 tablespoons soy sauce
+ 2 tablespoons oyster sauce
+ 1 teaspoon Chinese five-spice powder
+ ½ teaspoon ground ginger
+ 4 spring onions, thinly sliced

+ 1-2 tablespoons olive oil
+ 4 eggs

What you need to do:

1. Heat 1 tablespoon of butter in a saucepan over medium heat. Fry the garlic for 3-4 minutes until soft. Add the pork and fry until coated in butter.

 

2. Add the vegetables, season with salt and pepper and fry for 5 minutes, stirring frequently. Add rice and sauce ingredients, mix until well combined. Add spring onions, and fry for 5 more minutes, stirring frequently until the mixture is hot. 

 

3. Meanwhile, heat 1 tablespoon of olive oil in a separate frying-pan. Crack the eggs into the pan, cover with a lid and leave for 4 minutes over medium heat.

 

4. Divide fried rice amongst serving bowls and place the fried egg on top. Serve immediately.
