Crispy Pork Loin Roast
with Miso Cabbage

WHAT YOU NEED TO GET:

1 Bruemar Pork Loin Roast, approx. 1kg

+ Oil
+ 1 tablespoon ground sage
+ Salt

+ ½ green cabbage, wedged

+ ½ cup white miso

+ 1 cup parsley, finely chopped

+ 1 lemon, juiced

+ ½ cup greek yogurt

 

WHAT YOU NEED TO DO:

1.Preheat oven to 220⁰ C (fan forced).

2.Wipe the rind of any moisture with a paper towel. Rub the Pork rind with oil, sage powder and salt generously into the scores and into the rind.

3. Place the pork loin roast on a wire rack in a deep roasting pan lined with baking paper.

4. Cook for 1 hour. Then reduce oven to 180⁰ C for the remaining cooking time, allowing 30-35 minutes per kg.

5. Mix white miso, parsley, lemon juice and olive in bowl and coat cabbage.

6.Place cabbage on lined baking tray and cook in oven for the remaining 40 minutes of pork loin roast.
