Crispy Pork Loin Roast
with Creamy Smashed Potato Gems

WHAT YOU NEED TO GET:
1 Bruemar Pork Loin Roast, approx. 1kg
+ Oil
+ 1 tablespoon ground sage
+ Salt
+ 500g potato gems
+ ½ cup greek yogurt
+ ½ cup mayonnaise
+ ½ cup parsley, finely chopped
+ ½ cup dill, finely chopped
+ 1 lemon, juiced

WHAT YOU NEED TO DO:
1.Preheat oven to 220⁰ C (fan forced).
2.Wipe the rind of any moisture with a paper towel. Rub the Pork rind with oil, sage powder and salt generously into the scores and into the rind.
3. Place the pork loin roast on a wire rack in a deep roasting pan lined with baking paper.
4. Cook for 1 hour. Then reduce oven to 180⁰ C for the remaining cooking time, allowing 30-35 minutes per kg.
5. Cook potato gems in oven on lined baking tray for 10 mins. Remove potato gems and press them flat with the bottom of a glass bowl. Put potato gems back in the oven for the remaining 30 minutes of pork loin roast.
6. Mix together Greek yogurt, mayonnaise, parsley, dill and lemon juice in small bowl, refrigerate.
7. Remove pork loin from the oven, rest in the roasting pan for 10-15 minutes prior to carving.
8. Serve sliced pork roast and smashed potato gems topped with herby mayonnaise dressing.
