Crispy Pork Loin Roast
with Cheesy Bacon Cauliflower

WHAT YOU NEED TO GET:
1 Bruemar Pork Loin Roast, approx. 1kg
+ Oil
+ 1 tablespoon ground sage
+ Salt
+ 1 cauliflower
+ 1 cup parmesan, grated
+ 1 cup tasty cheese, grated
+ 200g bacon, diced
+5 sprigs of thyme
WHAT YOU NEED TO DO:
1.Preheat oven to 220⁰ C (fan forced).
2.Wipe the rind of any moisture with a paper towel. Rub the Pork rind with oil, sage powder and salt generously into the scores and into the rind.
3. Place the pork loin roast on a wire rack in a deep roasting pan lined with baking paper.
4. Cook for 1 hour. Then reduce oven to 180⁰ C for the remaining cooking time, allowing 30-35 minutes per kg.
5. Place cauliflower on lined baking tray and top with parmesan, tasty cheese, bacon and lemon thyme. Cook in oven for the remaining 40 minutes of pork loin roast cooking time.
6. Remove pork loin from the oven, rest in the roasting pan for 10-15 minutes prior to carving.
7. Serve sliced pork roast and cauliflower.
