PORK LOIN ROAST

WHAT YOU NEED TO GET:
1 Bruemar Pork Loin Roast, skin scored
+ Salt
+ Oil
Cauliflower and Sweet Potato Bake
+ 1 cauliflower, cut into florets
+ 500g sweet potatoes, diced
+ 2 tablespoons butter
+ 1 leek, finely sliced
+ 2 garlic cloves, minced
+ ½ cup milk
+ ¼ cup parsley, finely chopped
+ 4 sprigs thyme, finely chopped
+ 40g sundried tomatoes in oil, finely chopped
+ 30g panko breadcrumbs
+ 2 tablespoons olive oil
+ 2 tablespoons paprika powder
+ Salt and pepper
WHAT YOU NEED TO DO:
1. Pre-heat air fryer to 200°C.
2. Wipe the rind of any moisture with a paper towel. Rub the Pork rind with oil, then salt generously into the scores and into the rind.
3. Place Pork Roast in the air fryer basket and bake at 200 °C for 30 minutes until the rind begins to crackle. Reduce heat to 170 °C and cook for a further 30 minutes. Check that the internal temperature has reached 70-75 °C. (If not, continue air frying for a further 10 minutes.)
4. Remove the Pork from the air fryer. Cover loosely with foil and rest for 10 minutes before carving.
Note: The same process can be used for different type of Pork cuts. e.g. Leg Roast, Pork Belly, Shoulder Roast. The thickness of the cut will determine the cooking time.
Cauliflower and Sweet Potato Bake
Cook Time: 50 minutes
Serves: 4
1. Preheat oven to 180 °C (Fan Forced). Heat butter in a saucepan and sauté leek and garlic for about 5 minutes. Add cream cheese, milk parsley and thyme. Season with salt and pepper and simmer for about 5 minutes. Arrange sweet potato with cauliflower in a deep baking dish. Spread sundried tomatoes over the top. Add sauce mix and bake for about 20 minutes.
2. Mix breadcrumbs, oil, paprika powder and garlic powder in a small bowl. Remove bake from oven and sprinkle with breadcrumb mixture. Continue baking for about 10 minutes until cooked through.
