Cabbage-mint Salad

WHAT YOU NEED TO GET:

1 Pack Bruemar Pork Mignons with Coriander, Cumin and Lemon Core

+ 1 small cabbage, sliced

+ 3 carrots, grated

+ 4 sprigs mint leaves, sliced

 

Dressing:

2 tablespoons lime juice

1 teaspoons honey

1 tablespoon olive oil

salt and pepper 

 

Lime wedges to garnish 

WHAT YOU NEED TO DO:

  1. Combine cabbage, carrots and mint in a large bowl. In a smaller bowl whisk together lime juice, honey, 2 tablespoons water and oil.

  2. Season with salt and pepper. Pour the dressing over the salad and carefully combine. Let marinate for up to 30 minutes before serving. Garnish with mint leaves and lime wedges if desired.

  3. Preheat oven to 180 °C (Fan forced). Remove all packaging and place the mignons on a greased baking tray. Place baking tray in the centre of the oven and cook for 20 minutes.

  4. Serve Pork Mignons with cabbage-mint salad.
