PORK MIGNONS WITH
KALE, WALNUTS AND BLUE cheesE

What you need to get:

1 Pack of Bruemar Pork Mignons with Coriander, 
Cumin and Lemon Core

+200 ml Balsamic Vinegar
+90 ml White Sugar

+Olive Oil

 

+100 g Kale
+50 g Walnuts

+50 g Blue Cheese

+50 g Sultanas

What you Need to do:

  1. Pre-heat oven to 180 ºC. Remove all packaging and place mignons onto a greased baking tray. Place baking tray in centre of the oven and cook for 20 minutes.

  2. In the meantime prepare the other ingredients. For the dressing, mix balsamic and sugar together and reduce by 50%. Add sultanas. Cool and add the olive oil, whisk together.

  3.  Bring salted water to the boil, blanch kale for approximately 3 minutes. Roast walnuts in the oven at 180 ºC for 6-8 minutes.

  4. Crumble blue cheese. Dress kale with dressing, add walnuts and blue cheese. Season.
