PORK MIGNONS WITH
KALE, WALNUTS AND BLUE cheesE
1 Pack of Bruemar Pork Mignons with Garlic and Herb Butter
50 g Walnuts
50 g Blue Cheese
100 g Kale
200 ml Balsamic Vinegar
90 ml White Sugar
50 g Sultanas
1. Pre-heat oven to 180ºC. Remove all packaging and place mignons onto a greased baking tray. Place baking tray in center of oven and cook for 20 minutes.
2. In the meantime prepare the other ingredients. For the dressing, mix balsamic and sugar together and reduce by 50%. Add sultanas. Cool and add the olive oil, whisk together.
3. Bring salted water to the boil blanch kale for approximately 3 minutes. Roast walnuts in the oven at 180ºC for 6-8 minutes.
4. Crumble blue cheese. Dress kale with dressing, add walnuts and blue cheese. Season.
